A Vegan Recipe
When most people think of smoothies they usually think of sweet concoctions filled with fruits like berries and bananas and maybe even yogurt and milk, but this smoothie is different. Instead of filling you with sugars and dairy it is packed full of raw vegetables that provide a boost of nutrients and micronutrients that can serve as a light breakfast or lunch or a healthy snack in the middle of the day.
Gazpacho Smoothie Ingredients:
- ¼ cup of fresh water
- 4 plum (roma) tomatoes
- 1 cucumber
- 2 cloves of garlic
- 1 ripe haas avocado (or ½ of a Florida avocado)
- ¼ of a fresh jalapeno (or to taste)
- ¼ of a sweet onion
- ½ cup of fresh spinach, tightly packed
- ¼ cup of fresh cilantro
- ¼ cup of fresh parsley
- Juice from ½ of a lime
- Salt and pepper to taste
Directions:
The direction for this recipe are simple—just chop up all of the vegetables coarsely, place the chopped vegetables in a blender and blend smooth.
