Vegan Recipe – Serves 4
A sweet fireside treat with warm spices of this comforting fall dish can make any gathering of friends and family a special event. Feel free to add a touch of sorbet, frozen yogurt, ice cream or a slice of pound cake for a more substantial dessert or enjoy the spiced apple alone for a lighter dish.
Smoked Apples and Walnuts Ingredients:
- 4 large apples, cored and peeled (honey crisp is recommended but Gala or Fuji will work)
- ½ cup of coconut oil (can substitute butter)
- ½ tsp salt
- ½ tsp smoked paprika
- ½ tsp cayenne pepper (ground red pepper)
- 1 tsp cinnamon
- 5 tbsp of pure maple syrup
- parchment paper to completely wrap each apple.
Directions:
Reheat the oven to 400 degrees. Mix coconut oil with all of the dry ingredients and 1 tbsp of maple syrup (reserving 4 tbsp). Coat each of the apples generously with the seasoned coconut oil inside and out. Place each apple in a sheet of parchment paper and place on a baking sheet. Before covering the apples in parchment paper, drizzle 1 tbsp. of maple syrup over each apple, wrap the apples in parchment individually, then reduce the heat of the oven to 375 degrees and bake for 40 minutes until the apples are hot and tender.
Optional:
You may serve as is to make a delightful dessert or side dish or you may pair with sorbet, frozen yogurt, ice cream and/or a slice of pound cake for a heartier dish.
