White Bean Chili

Vegan Recipe- Serves 4-6

Football fans are ready to cheer on their teams, and few things suit a proper tailgating party better than a warm hearty bowl of chili. This recipe is vegan at its base, but feel free to feed meat to your clan, andvegan chili with white beans add in nearly anything you like— from stew meat to ground beef and sliced chicken to ground turkey. White Bean Chili Ingredients:

  • 30 oz of cooked white cannellini beans
  • 6-8 cups of vegetable broth
  • 8 oz can of tomato paste
  • 1 whole large onion, chopped
  • 6 cloves of garlic, chopped
  • 2 bell peppers, chopped
  • 1 zucchini, chopped
  • 1 tbsp of onion powder
  • 1 tbsp of chili powder
  • 1 tbsp of mustard powder
  • 2 tsp of cumin
  • 2 tsp of dried oregano
  • 2 tsp of smoked paprika
  • 1 chipotle in adobo (spice to taste)
  • Salt and pepper to taste

Directions:

Simmer all ingredients together for 20 minutes. Remove ¼ of the mixture and blend in a blender until smooth and add back to the pot to thicken and stir to combine completely. If you choose to add meat such as cooked ground beef, chicken or turkey—brown the meat separately in a skillet with salt and pepper, then add to the pot). Continue simmering for another 15 minutes. If you would like to add stew meat to the chili, brown the stew meat separately in a skillet with salt and pepper, then add to the chili mixture and simmer for an additional 40 minutes.

Options:

Feel free to garnish with chopped onion, fresh cilantro or parsley or grated cheddar cheese.
