Modified Citrus Pectin is made from the peel and pulp of citrus fruits, grapefruits, lemons, oranges and tangerines. It does not contain citrus allergens.
When its larger molecules are broken down into smaller ones, modified Citrus Pectin takes on a different molecular weight than ordinary citrus pectin. There are several ways to modify pectin. The less expensive method is a process that uses sodium hydroxide (otherwise known as lye) along with an acid that breaks down pectin’s molecules into smaller, non-uniform fragments, which consist of molecules no smaller than 30,000 daltons. Studies indicate that pectin’s molecules should be between 10,000 to 20,000 daltons for optimal absorption.
