Spiced Roasted Chickpeas
A vegan appetizer or healthful snack has arrived—complete with a little bite to bite back at you. A spicy little recipe that is full of protein and fiber, yet keeps the boredom away. This recipe is great for entertaining, bringing to cocktail parties, snacking or a crunchy addition to salads or roasted meat.
Spiced Roasted Chickpeas Ingredients (makes 4, ¼ cup servings):
- 1 can (28 oz) chickpeas, rinsed and drained
- 1 tablespoon olive or grape seed oil
- 2 tablespoons of spice mix (equal parts: cumin, paprika, ginger, turmeric, red pepper flakes and ground black pepper)
- Add salt to taste
Preheat oven to 400 degrees. In a large bowl, toss beans and oil and coat evenly. Combine with seasoning mix. Spread out in single layer on a cookie sheet. Bake for 10 minutes, then stir up beans to brown evenly. Bake another 10 minutes until brown.
